Rice and Bean

Here is an excellent Costa Rican Recipe:

1 portion rice

1 portion beans

Service hot, warm or cold. If you are still hungry, have another serving.

Lunch should be under 50 cents and leftovers are good for dinner.

Add a little salt. Add a little pepper. Add a little hot sauce.

Thank author of this post/commentI don't know if I could do rice and beans for breakfast, but lunch and dinner are definately in. Homemade beans and rice definately beat out that nasty Taco Bell. I have an uncle that can make some mean enchiladas, beans, rice, and any type of spicy food.

Thank author of this post/commentYum those recipes and food sounds so good to me. I'm a huge fan of rice and beans, and especially enchiladas. Spicy food, my love!

Hmm I know avocado is kind of expensive up here, do you see avocadoes down in Costa Rica at all? I love burritos with avocado slices as dressing.

Thank author of this post/commentBeans and Rice are not authentic to the United States, but we eat them all of the time. I am in Texas so we have TexMex restaurants everywhere. I really probably had nothing that would taste the same as the Costa Rican style, but on the other hand it is such an easy recipe, possibly I have.

yeah beans and rice for breakfast doesnt really seem like a day starter for me.. but with the right recipe i am willing to try anything.. anything anbody would recommend?

I found many of the bed and breakfasts in Costa Rica served the gallo pinto (rice and beans with ciluantro and a bit of spices and cookie in a bit of oil) with fresh fruit. Now that makes a nice breakfast. The Costa Ricans don't seem to go much for the fresh fruit at breakfast.

Gallo Pinto (beans and rice) Recipe

1 lb (450 gr.) Black beans. Fresh are best but most likely you’ll find them dried.

8-10 sprigs cilantro (coriander leaf) fresh or frozen, not dried!

1 small or medium onion

½ small red or yellow sweet pepper (optional)

3 cups (700 ml) chicken broth or water

2 cups (350 ml) white rice

½ teaspoon (2.5 ml) salt

1 Tablespoon (15 ml) vegetable oil

1-3 Tablespoon oil to fry the Gallo Pinto

If beans are dried, cover with water and soak overnight, if they are fresh, just rise them off. Drain the beans and add fresh water to an inch (2.5-cm) above the top of the beans, salt, and bring to a boil. Cover the pan and reduce heat to very low simmer until beans are soft (~3 hours).

Chop cilantro, onion, and sweet pepper very fine.

Add 1 Tablespoon oil to a large pan and sauté the dry rice for 2 minutes over medium high flame then add half of the chopped onion, sweet pepper and cilantro and sauté another 2 minutes. Add water or chicken broth, bring to a boil, cover and reduce heat to simmer until rice is tender (20-35 minutes). This is also the recipe for Tico rice used in other favorites like tamales.

Once the rice and beans are cooked you can refrigerate or freeze them. Keep a significant amount of the “black water” with the beans (½-1 cup 120-240 ml). This is what gives the rice its color and some of its flavor. Sauté the rice, beans reserved chopped onion, sweet pepper and cilantro together in vegetable oil for a few minutes. Sprinkle with a little fresh chopped cilantro just before serving.

Once the rice and beans are cooked you can also refrigerate or freeze them. Make up small batches of Gallo Pinto when you want it by simply sautéing them together.

In Guanacaste they sometimes use small very hot red peppers instead of or in addition to the sweet. Some people add a tablespoon or so of salsa Lizano or Chilera to the beans while they're cooking. Our friend Mercedes always simmered the beans very slowly all-day and preheated the water or chicken broth for the rice.

Arroz Valenciana Recipe - This is a rice base recipe good for your hungry stomachs. Best eaten at breakfast or dinner But don't overdo eating this one 'cause it's quite a heavy meal. Enjoy.

Ingredients

* 1 small chicken fryer, cut in 2-inch pieces

* 1/2 lbs. pork cut in 1-inch pieces, 1/4 inch thick

* 2 chinese sausages

* 6 small potatoes, quartered

* 2 garlic cloves, chopped

* 2 large ripe tomatoes

* 2 bell peppers (red preferrably), cut in 1/8 pieces

* 1 cup green peas

* 3 cups rice boiled in 3 cups of water and 2 cups of coconut milk

* 1/2 cup butter (1/2 bar)

* 1/4 cup black olives, sliced

* 1 tsp. salt

* 2 garlic cloves and 1 head onion (finely chopped - for sauteing)

Procedure

1. Place chicken and pork in frying pan and saute with garlic, onion and a slice of butter. Cook chicken and pork.

2. Season with salt and pepper until slightly brown.

3. In a deep sauce pan fry garlic, onions and tomatoes in butter in the given order.

4. Add the potatoes, chicken, pork and sausages.

5. Stir and cover until meat and potatoes are done.

6. Add water if necessary.

7. Add the bell peppers, peas and black olives.

8. When meat and vegetables are done, remove some of the stock from the meat and set aside.

9. Add the cooked rice to the meat and mix thoroughly.

10. Add remaining stock and season to taste.

11. Cook on low heat until mixture becomes quite dry.

12. Serve on platter and garnish top with sliced hard boiled eggs. stuffed olives, bell pepper strips and sprigs of parsley leaves.

Well, I am not fund of eating American "Pork and Beans" it's not just my taste. I'd rather go with a viand and rice rather than salads and beans.

If you are not *REALLY* fond of rice and beans... you will not be fond of Costa Rica. You can't separate the two.

Poor man's paradise

Keep this min mind... . Some people like to call Costa Rica various things like Puerto Rico or Costa Rico. Costa Rica translates to "Rich Coast"... check out Costa Rica. Costa Rica is also two words, not one, ie: Costarica or CostaRico. San Jose is the capitol city of Costa Rica.
